For Dr.Libby Prussin's 70'th birthday, we made a cake.
First here's Libby (my step mom) and my dad.
The top cake was an 8 inch traditional white wedding cake topped with a red rose symbolizing
the fact that love is atop all. The layers were 6 slices of genoise laced with rum and
frangelico. Between were strawberry and raspberry jams interlayered with vanilla buttercream.
The rose was formed with white fondant. The flower was glazed red and the leaves green.
You can't see it clearly in the picture, but there are white piped roses all along the top
border, an alternating small and large shell pattern starting down the sides with roping.
There are six ropes outlining the larger shells and two for the smaller. Along the bottom
edge are reverse shells with fleur de lys coming up towards the roping.
The 10 inch middle tier was a chocolate conglomerate of sour cream & espresso chocolate cake,
filled alternatingly with cherry and black raspberry preserves. The buttercream was chocolate and
the flavorings were Kahlua & Chambord. The entire cake was draped in a shiny melted chocolate
and cream glaze, then topped with a yellow piped rose, and finally wrapped at the base with
a silver ribbon.
The bottom layer (12 inches) was covered with a yellow tinted rolled fondant. The layers
were yellow cake slices drizzled with Cointreau & Grand Marnier, with apricot & peach jams as well
as an orange flavored buttercream. The cake was encircled with variously shaded yellow piped
flowers, with one white piped rose standing alone.
The cake stand was designed and created by my father, Victor Edelstein.

This is a tripple layer cheese cake (plain, orange, and chocolate) for Ben Gunter's parents' anniversary. Ben, for the curious sort, was my s.o. for quite a time in Florida.
Greg Presley, one of the great people in my life, is a concert pianist and teacher. For a period, I had the honor of catering the receptions and his concerts. This particular piece was a rendering of him at his piano. Yes, he's a Ken doll! The piano was a genoise covered in white and chocolate fondant with a chocolate covered gingerbread top flap (show in front) with an inscribed royal icing treble clef. Campy? Me? Never!

Chocolate anyone?

This little pizza (or what's left of it) was made with our own homemade mozerella. This was Al's reward for his hard work (see cheesemaking page).
